This is one of my favorite easy lunches to batch cook. Adapted from No Crumb's Left recipe. Plus, we all know I have a love of canned tuna for lunch!
INGREDIENTS:
- 1 box Jovial Grain Free Pasta, cook al dente according to directions on box
- 1 can tuna, drained
- 1 cup peas
- 1 cup mayo or use dairy free yogurt if you're not into mayo
- 2-3 stalks celery, diced
- 1/2 cup onion, diced
- 1 bunch parsley, minced
- a few sprigs of dill, minced
- salt and pepper to taste
Cook pasta al dente according to direction on the box. For the lat few minutes add frozen peas. Drain and RINSE (this is a key step with the grain free pasta.)
Place pasta and the rest of ingredients in a large mixing bowl and mix completely.
Refrigerate and serve on the side or for lunch!
