The Breakfast Sandwich Omelet - GF DF

I've been making this awesome breakfast omelet for me and the hubby in the mornings, and Begum (a YESyoga client) posted she makes hers in her air fryer! 

I'll give you my recipe, and I am planning on trying the air fryer method soon, so I'll keep you posted!

INGREDIENTS (for 1 omelet)

- 2 eggs, whisked in their own bowl

- 2 sliced Boar's Head Black forest Ham

- Sprinkle Violife Shredded Dairy Free Cheese

- Drizzle Primal Kitchen Avocado Ranch Dressing

- Salt & Pepper to taste

- 2-3 tbs avocado oil


Using a medium size, but  not too big skillet, heat oil over medium to high heat. Right before pouring whisked eggs into skillet, lower heat to low/medium. Pour eggs into skillet and wait about 2 minutes. Then add ham, dairy free cheese, and sprinkle with salt and pepper.

I like to do the fold over as I'm sliding the egg onto the plate then using the pan and my spatula to fold.

Drizzle with ranch! 


I need to get a little fancier and add green onions, but for now, this is just as yummy.

The air fryer trick is to do the same but cook on 400 for about 7 minutes (or until your preferred done-ness.) I'll let ya know how it goes when I make the next one!
