I was craving the Coppa Chopped Salad the other night, and I had no lettuce, and I didn't really want to order to-go just for myself that night, so I subbed the lettuce for my favorite grain free Jovial Pasta!
- 1 Box Grain Free Jovial Pasta
- Sliced and Chopped Salami (sub chickpeas for salami to make it fully vegan!)
- Chopped Basil
- Chopped Mint
- Kalamata Olives
- Chopped Banana Peppers
- Follow Your Heart Vegan Feta
- Olive Oil
- Red Wine Vinegar
- Salt and Pepper
Cook pasta according to directions on box. Rinse the pasta after cooking.
Add the rest of the ingredients and mix! You can keep this cold in your refrigerator for easy meals throughout the week!
