Basil Pesto (GF, DF)

Pesto has been my jam lately for pasta nights! I try my best not to eat tomatoes because they make me all inflamed on the insides and make my brain really foggy. So, I've switched to my no-mato pasta sauce or pesto! What I've also come to realize, I can load this pesto up full of amazing nutrient dense ingredients! 

This dish I added grilled chicken on top, but if you're vegan it's good to go!


- 1 1/2 cups Basil

- 1 cup kale or spinach

- 1/2 cup walnuts

- 1/4 cup nutritional yeast

- 3 tbs hemp seeds

-1/2 cup olive oil

- 3 cloves garlic

- salt and pepper


Put all ingredients in food processor and pulse until desired consistency is reached. I used Jovial Grain Free Pasta with Vegan Parmesean and topped with grilled chicken.

FYI, basil is a plant that does oxidize just like avocados, so I would suggest making and eating fresh. You might even notice a color change pretty quickly from food processor to your bowl of spaghetti 

You can honestly tell the oxidation of the color of the pesto in the pic!
