Immunity Boosting Chicken Soup (GF, DF)

If you're feeling a little bleh, this is my go to. Please note: these foods won't cure you, but there are ingredients that are scientifically proven to help decrease gut inflammation or help your overall well being. Eating nutrient rich foods helps your overall well-being, so even when you don't feel bleh, see how many more colors you can add to your daily fuel!

 

*Can take up to 1 hour or more to make!

 

INGREDIENTS:

6 cups chicken bone broth

1lb chicken breast

- 3 celery stalks, chopped

- 3 carrots chopped

- salt & pepper

- 3 garlic cloves, minced

- 2 tbs turmeric

- small piece of ginger, minced

- one yellow onion, chopped

- one bunch parsley, chopped

 

I like using a big dutch oven or soup pot for this! Add onions, garlic, chicken, ginger, turmeric, salt and pepper, and broth to your pot. Cover and let simmer for about 30 minutes.

Take chicken out of pot and shred, put back into pot with remaining veggies (broccoli or green beans is another favorite of mine to add if I happen to have them in the fridge). Let simmer for another 30 minutes, adding more stock if needed.

I don't add noodles or rice, because those can tend to bother my stomach if I'm already feeling sick, but if they don't bother you feel free to go for it! Also, if you're a mushroom fan (which I am, but not really anyone else in my house) you can add them to this recipe during the first simmer. 

You can also make a huge batch of this, freeze it in flat ziplock bags!
