FENNEL & CUCUMBER SALAD
I made this as a side dish to steak the other night! Fennel is so good for you and it's bursting with nutrients that help with maintaining a healthy heart, support your skin, and anti-inflammatory properties. It's high in magnesium and calcium, two micronutrients most of us are lacking.
If you're vegan you can eat as is, otherwise throw it as a side dish!
INGREDIENTS:
- 2 Fennel Bulbs, sliced
- 2 to 3 stalks of celery, sliced
- 1 cucumber, sliced
- 1 juice of lemon
- 3 tbs chopped dill
- 1/4 cup vegan parmesan cheese
- Salt and Pepper to taste
The directions are simple since this is a raw veggie dish. Just chop, mix, and serve!
