Breakfast Sausage Bowl (GF, DF)

This is one of my favorite meal preps! You can make this way ahead of time and then add the eggs. They honestly are not essential to the dish, but if you're an egg in the AM kinda person add one!

I made the sweet potatoes the day before then added them to the dish the next day. 

 

INGREDIENTS:

- Kiolbassa Natural Smoked Sausage

- 2 Sweet Potatoes, peeled and diced

- chopped Kale

- fried eggs

- 3 to 6 tbs olive oil

 

Preheat the oven to 375 degrees. Place parchment on the baking pan and add diced sweet potatoes with a few tablespoons of oil. Bake until golden brown - approximately 30 minutes.

You can save the roasted and diced potatoes for other recipes if needed!

On a medium-sized skillet. Heat 2 tbsp oil over medium heat and add diced sausages. Cook until heated through. Add sweet potatoes to a pot and chopped kale. Cook until kale is wilted.

You can fry an egg and place it on top!
