I found SUCH a great no tomato pasta sauce that the whole family enjoys (plus I've been super obsessed with everything Unbound Wellness lately. Even if you eat tomatoes, this is a sneaky lil' way to get some veggies in if needed.
*This can easily be made vegan, I served with meatballs, grain free pasta, and vegan parmesan.
INGREDIENTS
- 2 tbsp avocado oil
- 2 cloves garlic, minced
- 1 white onion, diced
- 2 1/2 cup carrots, chopped
- 4 celery stalks, chopped
- 3 to 4 large beets, peeled & chopped
- 1 tbsp fresh basil
- 1 tsp oregano
- 2 tsp parsley
- 1 tsp sea salt
- 1 cup chicken stock ( can use water or veggie stock to make vegan)
- 2 tbsp lemon juice
Place avocado oil in large sauce pan, heat on medium. Add onions, garlic, carrots, celery and beets and sauté for about 5 minutes. Add oregano, parsley, salt, stock and lemon juice to pan and let simmer until veggies are tender (about 25 minutes).
Place in blender and blend on high until a nice sauce forms. You can add 1tbs of water at a time if you like your sauce to be a little more runny.
From here you can serve as normal pasta sauce however you normally like to eat it!
