Banana Bread by: Erin Cummings
I *think* this was supposed to be a "secret family recipe," but with all of the modifications it's no where near the old recipe.
INGREDIENTS:
2 C Gluten Free Flour (I use GF King Arthur)
1tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp all spice
1 1/2 c sugar
2 sticks of vegan butter
2 flax eggs (one flax egg = 1tbs ground flaxseed + 2.5 tbs water)
3 large gross brown bananas that you forgot about in your pantry from your last grocery trip
1tsp vanilla
1cup bonus item (like chocolate chips, pecans, etc)
Preheat oven to 350. Combine all the dry ingredients together. Cream vegan butter and sugar together. Mix in flax eggs, bananas, and vanilla. Add dry ingredients to banana mix. Add bonus item.
Do toothpick test at 1hr. I find the GF flour takes a little longer to cook in situations like this, so give yourself extra time if needed (my latest batch I left in oven for about 1hr 20 min).
Also, this is really freaking good with some peanut butter slathered all over it in the mornings, or when you are bored and sick of looking at your computer screen, or hiding late at night in the pantry from your kids. Enjoy!
