Cauliflower & Brown Butter Pepitas (GF, DF, V)

Oh this was such a great addition as a side with our steaks on the grill. If you aren't a meat eater, you could serve this as a main dish with some corn or black beans!!!



-1 Whole Cauliflower

- 3 tbs ghee (or vegan butter)

-1/4 cup pumpkin seeds

-1/4 cup chopped cilantro

- Salt

- Red Pepper

- juice of one lime


If you are grilling, throw cauliflower steaks on the grill....

Otherwise, preheat your oven to 450 degrees F. Chop cauliflower, dress with avocado oil and roast for about 25-30 minutes.


Heat ghee (or vegan butter) in a skillet over medium heat. Add pumpkin seeds. Stir constantly for about 5 minutes. DO NOT BURN. Remove from heat.


Add chopped cilantro, lime juice, and salt to pumpkin seeds. Pour over cauliflower and serve!
