Packed full of earthy goodness, this Vegan Earth Bowl is a perfect winter treat.
- Date Rice
- Kale, chopped
- 3 to 4 tbs Avocado Oil
- 2 Sweet Potatoes, peeled and diced
- 1 cup mushrooms, chopped
- Dairy Free Tzaziki Sauce
- Salt and Pepper
Pre-heat your oven to 375 degrees F. On a baking sheet with parchment paper, lay out sweet potatoes and drizzle with salt and avocado oil. Bake for 25 - 35 minutes, depending on size of diced potatoes.
Head a saute pan on medium heat with oil and add mushrooms. Stir occasionally, about 7 minutes.
Lastly, place kale in a large salad bowl, add a splash of olive oil or avocado oil, and gently massage kale using hands or tongs to soften.
Serve over date rice and top with vegan tzaziki sauce.
