Tahini & Chocolate Chip Ginger Snaps (Vegan, GF)

As we all know I love tahini, and my friend sent me this recipe on instagram that she tried and loved them...so of course I made them! I found them to be super flaky and dense, not in a gooey regular chocolate chip kinda way, so just be mindful of that. They were super easy! For this recipe I actually subbed out the maple syrup with honey. 

 

I'm not that great of a baker, I used to be before going GF. I find that this requires much more precision with ingredients and I hate measuring stuff....

 

INGREDIENTS:

- 1 cup almond flour

- 1 cup tahini

- 1/2 cup maple syrup (I subbed honey, but to be truly vegan use maple syrup)

- 1 tbs molasses

- 1 tsp cinnamon

- 1/2 tsp ground ginger

- 1 flax egg

- 1 tsp baking soda

- 3/4 dairy free chocolate chips

- sea salt flakes to sprinkle on top

 

Mix together flour, tahini, maple syrup, molasses, cinnamon, and ginger and place in refrigerator for 30 minutes. 

Preheat oven to 350 Degrees. Remove mix and add flax egg, baking soda, use a wooden spoon for this as the dough will be hard to mix. Then add chocolate chips. 

Place small dollops on a parchment lined baking sheet and bake 10 minutes. Transfer to cooling rack and top with salt!
