Summer Tuna Salad with Mustard Vinaigrette (GF, DF)

Okay okay okay, I know it's more tuna salad for lunch, but I'm telling you it's seriously easy and becoming one of my favorite go-to's for bringing my lunch!

This version is no-mayo, and I made a simple mustard vinaigrette for the dressing.

 

INGREDIENTS:

- Lettuce of choice

- 1 stick celery, diced

- 1 avocado, diced

- 1 can tuna, flaked

- 1/4 cup olive oil

- 1 tbs red wine vinegar

- 1 garlic clove, minced

 - salt and pepper

- 2 tbs dijon mustard

- 1 tbs capers

 

Mix the dressing first using: olive oil, red wine vinegar, garlic, dijon mustard, capers, and salt and pepper. Then make your salad & pack it in your lunch box!
