Spa Tuna Lunch

I never in a million years thought I would eat canned tuna for lunch, but it's seriously the easiest thing ever and I eat it probably 2-3 times per week. Real talk, it's something my kids won't eat and I wish they would, but it finally gives me something to myself.

 

We recently got back from Spain and Portugal and we did an entire fish in can tasting that was so awesome, so I'll be upgrading my canned tuna soon, but for now I purchase the Central Market brand.

 

Ingredients:

- 1 Can Tuna, drained

- Favorite lettuce

- 1 avocado

- 1/2 yellow onion diced

- 1 to 2 sticks celery, diced

- 1 small scoop Whole 30 Mayo (leave out or sub with vegan yogurt)

- 2 tsp dijon mustard

- 1-3 dill pickles, diced

- Spicy Salt

- Drizzle of Olive Oil

 

I like to smash the avocado first then add mayo and the rest of the ingredients. Top lettuce with tuna mixture and you can add spicy salt and some sprouts on top!
