I made my own version of a pizza pasta! I didn't really want to deal with my weird pizza version in the pizza oven, so I made a pasta version instead.
Since I'm no cheese/dairy, no gluten, no nightshades, it's been getting harder to come up with pizzas, so I cut up the pepperonis and made some pesto! It was so good and super easy!
INGREDIENTS:
- 1 Box Jovial Grain Free Penne
- handful sliced pepperoni
- grated vegan Parmesan
PESTO:
- 1 cup basil
- 1 cup spinach
- 1/2 cup olive oil or more as needed
- 1/3 cup walnuts
- 1/2 cup vegan parmesan (sub nutritional yeast if you don't have vegan parm)
- 3 to 4 garlic cloves
- salt and pepper to taste
Cook pasta as directed on package. In a food processor mix pesto ingredients and pulse until desired consistency is reached, adding more olive oil as needed.
Mix it all together and top with more vegan parmesan.
