My kids are OBSESSED with Taco Tuesday, like if we don't have tacos on Tuesday it's a REAL problem. Lately, I've been making these smashed crispy versions, which are perfect for dipping into whatever dips or beans... who doesn't love that?!?!
Ingredients:
- Ground Beef
- 1/2 cup riced cauliflower
- taco seasoning (I usually mix my own with cumin, paprika, chili powder, oregano, lime zest, and salt & pepper)
- tortillas of choice (I use Siete Brand)
- vegan cheese & other toppings of choice like avocado & lettuce
Preheat your oven to about 400 degrees F. You'll make your tacos like normal - ground the beef and cauliflower together. Place any inside taco ingredients in the tortilla. Then fold the tortilla in half. Place tortilla on a large baking sheet and once you've made a few you'll top the tortillas with a smaller baking sheet.
Bake each side or about 6-8 minutes, depending on crispiness. Then I cover mine with avocado and lettuce!
