I haven't had pasta salad in a seriously long amount of time. First big reason..... GF pasta that works. The problem with a lot of gluten free pastas are they are made with terrible ingredients or they just don't cook well. But this new orzo cassava flour gf pasta worked GREAT!
I haven't tried them in a cooked full dinner yet, but will let you know! I cooked the whole box so I can eat this for lunches throughout the week (give me dill and olives and I'll love you forever.)
Ingredients:
-1 box cooked orzo
- 2 cups chopped cherry tomatoes
- 1 cucumber peeled and chopped
- 1/2 red onion
- 3/4 cup kalamata olives, chopped
- 1/2 cup vegan feta cheese
- 2tsp salt
- 3tbs chopped dill
Dressing:
-1/4 cup red wine vinegar
- zest of 1 lemon
- juice of 1 lemon
- 2 tbs dijon mustard
- 3/4 cup olive oil
Mix salad ingredients together, and you can mix dressing ingredients directly into salad and toss or separately. I mixed them all together for easy lunch accommodations.
I tossed with lemon garlic shrimp for family lunch, but can be eaten on its own!
