I got an air fryer, which is very exciting and I wasn't sure if it would honestly be great, but these cooked PERFECTLY in it! If you don't have an air fryer, you could easily bake the shrimp or pan fry them in a large skillet!
SHRIMP:
- 1 cup coconut flakes
- 1 egg
- pinch of salt & pepper
- pinch of Paprika or Cayenne Pepper
Dressing:
- 1 avocado
- 1 cup unsweetened regular almond milk yogurt
- Juice of two limes
- 1 cup cilantro
- 2 -3 garlic cloves
Salad:
- chopped romaine lettuce
- chopped green & red cabbage
- 1 mango, diced
Place whisked egg in one bowl and coconut flakes and spices in another. You'll dredge each shrimp in the egg, then in the coconut flakes. Place in basket of air fryer/pan/baking sheet. Do this with each shrimp. I cooked the shrimp in the air fryer for 10 minutes at 350 degrees, and flipped in between.
While the shrimp is cooking, make the dressing by placing everything in a blender or food processor and blend until smooth.
Finally, put all of the salad ingredients together and top with cooked shrimp!
