In honor of Hanukkah, it's all about the Latke! But seriously though this year I'm working every night so we went all out on the Latke situation. I was super inspired by Eden Grinshpan's Latke board, so I did one myself....and forgot a pic.
The difference in our recipes is that I cannot use the traditional white potato, as that is considered a nightshade....however I did make a batch for the kiddos. Use this recipe as a base for white potatoes, sweet potatoes, beets, or zucchinis!
INGREDIENTS:
- about 3 sweet potatoes/white potatoes, 4 large beets, or 4 - 5 zucchinis
- 3 tbs tapioca flour
- 3 tbs almond flour
- 2 tbs ground flax meal
- 3/4 tsp onion powder
- 1/4 tsp sea salt
- 3 tsp avocado oil
Preheat oven to 300 Degrees F.
Use the medium coarse peeler blade on your food processor and shred your vegetable that you chose. Make sure to squeeze any water produced from the veggies so that the vegetable is not wet. Add tapioca flour, almond flour, flax meal, onion powder, and sea salt and mix.
Heat oil over medium heat in a large frying pan. Using a small scoop, scoop a mixture and pack into a pancake. Cook until bottom is golden brown/ dark red and flip!
Put on single baking sheet and place in oven to keep warm while making the batch or setting up the rest of the table!
I also made hummus, vegan labneh, and we added a little dill and caviar!
