OMGGGG I found it, I finally found a no-nightshade queso/nacho cheese recipe. As a tomato-less eater now, I've been struggling to find some of my favorite things that do not have tomato paste in them. Shout out to Unbound Wellness for doing all the work and creating this super yum recipe!
I made homemade grain free, gluten free taquitos with a soup style portion of this cheese!
- 2 tbsp avocado oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup sweet potato, peeled and cubes
- 1 1/4 cup butternut squash, cubed
- 1 cup chicken broth
- 1/2 cup coconut milk
- 3 tbsp nutritional yeast
- salt & pepper
- 1 tbsp + 1 tsp arrowroot starch
In a large pot add avocado oil, onion, and garlic and cook until translucent. Then add sweet potatoes, butternut squash, broth, coconut milk, salt, pepper, and nutritional yeast.
Bring to boil, cover, and let simmer for about 15 minutes.
Once potatoes and squash are soft place everything in a blender with arrowroot starch.
