Grilled Chicken & Peach Salad (GF, DF)

In experimenting with no nightshades, I've been trying to add fruit to my lunch and dinners now. I saw this recipe at one of my favorite restaurants on their menu and have been craving it ever since! Honestly, you could add any of your favorites or make it really fancy, or you can keep it super simple.

 

INGREDIENTS:

- 3-4 chicken breasts

- 4-6 peaches, cut in half, remove pit

- arugula & red leaf salad mixture (or your favorite lettuce mix)

- prosciutto

- blackberries

- Mykonos Chive Soft Cheese

- Olive Oil

- Balsamic Vinegar

- Candied Walnuts

- Salt & Pepper to taste

 

Pat the chicken dry and season with salt and pepper. Heat the grill and on medium heat grill chicken. I like to lay the chicken down and after 3-5 minutes rotate the chicken about 45 degrees so that you get those nice cross grill marks. Then flip the chicken and do it again. 

After you flip the chicken you will lay the peaches cut side down on the grill, and grill for about 5 minutes.

 

After everything comes off the grill, build your salad. I just used a splash of olive oil and balsamic vinegar for dressing, but you could make a balsamic reduction or even a lemon vinaigrette.
