Cauliflower Sushi Bowl (GF, Vegan, No Nightshades)

I just finished a meal program with Jess and one of our meals was this awesome plant based cauliflower sushi bowl. (If you are interested, we did the Level II Detox from Sakara, I'm now totally obsessed.) I normally would not recommend doing a "detox" but it was a great way to incorporate new habits, take a break from some old ones, challenge myself.....and they send you breakfast, lunch, and dinner so I didn't have to make myself a single meal.

Our very first lunch was a Cauliflower Sushi Bowl and tried to recreate it, it's not the same because they use a ton of fancy ingredients that I don't have like red cabbage powder, nori flakes, and a very specific mushroom. But, I thought it turned out pretty great, and I tried to use as many ingredients as I could based on their ingredient list. 

To make the recipe is simple, there is just a lot of ingredients and a lot of chopping. Save yourself time by using your shredder on your food processor if you have one. Otherwise, if you like to chop like me, give yourself a little extra time!

INGREDIENTS:

Salad Base:

- Leafy Greens of your choice

- Red Cabbage, thinly sliced

- 2 - 3 Carrots, thinly sliced

- Cucumber, peeled & sliced

- 3 Radishes, julienne sliced

- Avocado

Cauliflower:

- 1/2 cup Lima Beans

- Cauliflower, riced 

- Mushrooms, chopped

- 2 - 3 tbs Avocado Oil

- Salt

Sauce:

- 3 tbs Seasame Oil

- 1/4 cup Coconut Aminos

- Lemon, juiced

- Salt

- 2 tbs Hemp Seeds

- small piece of Ginger, minced

Topping:

- 2 tsp tumeric

- 2 tsp ground ginger

- 2 tbs poppy seeds

- 2 tbs white sesame seeds

- 2 tbs black sesame seeds

- 2 tbs poppy seeds

- 2 tbs hemp seeds

- salt

Fill the bowl or plate with the salad ingredient base. In a separate bowl mix sauce ingredients together. In another small bowl, mix topping ingredients together. 

Heat avocado oil in a sauté pan over medium heat, then add riced cauliflower, mushrooms and lima beans. Cook until softened. 

Scoop cauliflower mixture over salad base, add sauce, then top with seed mixture! 

......I realized I was so hungry and dug in before I got a good pic!
